In a mixing bowl, combine the hoisin sauce, soy sauce, ginger, and garlic. Add the pork and mix well to coat evenly.
Let the pork marinate for at least 10 minutes to enhance the flavor.
Heat a wok over medium-high heat and add a teaspoon of sesame oil. Add the marinated pork and stir-fry until fully cooked, about 5 minutes. Remove and set aside.
Ensure the wok is hot before adding the pork for a nice sear.
In the same wok, add the carrots, peas, and green onions. Stir-fry for 3 minutes until tender-crisp.
