Heat the olive oil in a large sauté pan over medium heat.
Ensure the oil is hot but not smoking before adding the ingredients.
Add the chopped onion and minced garlic to the pan. Sauté until softened, about 5 minutes.
Stir frequently to prevent the garlic from burning.
Add the chopped tomatoes, adobo seasoning, ground cumin, ground cinnamon, chipotle chile, and adobo sauce. Cook for 5 minutes until the tomatoes break down.
Crush the tomatoes with the back of the spoon to help them release their juices.
Add the shrimp to the pan and stir to coat with the sauce. Cook for 2 minutes until the shrimp start to turn pink.
Avoid overcooking the shrimp to keep them tender.
