Prepare rice according to package instructions.
Peel and finely dice the onion and garlic. Halve the zucchini and slice it.
Heat vegetable oil in a large skillet and sauté the onions until they are translucent. Add garlic and fry for another 2-3 minutes. Add the zucchini slices and fry for 5 minutes until they are slightly browned. Add the vegan mince and fry until it is lightly browned. Fold in the sunflower seeds and cherry tomatoes.
Season the skillet with soy sauce, sweet paprika powder, cayenne pepper, ground coriander, ground chili, salt, pepper, and lemon juice, and serve with rice. Crumble the vegan almond feta and sprinkle it over the dish.
