Preheat the oven to 175 °C (350 °F) and line a baking sheet with parchment paper.
In a small mixing bowl, thoroughly combine the all‑purpose wheat flour, rolled oats, baking powder, ground cinnamon, and kosher salt.
Place the unsalted butter, brown sugar, and granulated white sugar in the stand mixer bowl. Beat on high speed until light and fluffy. Incorporate the eggs one at a time, then add the vanilla extract.
Run the mixer on low speed and add the dry flour mixture. Mix briefly until just combined. Fold in the coarsely chopped dark chocolate and chopped walnuts.
Portion the dough: scoop about 2 tablespoons (≈30 g) into round mounds and place with a spoon onto the prepared baking sheet, leaving about 5 cm between each.
Bake the cookies for 12–13 minutes, until the edges are lightly golden brown.
Immediately after removing, sprinkle the cookies with a few flakes of flaky sea salt. Let cool for 3 minutes, then transfer to a cooling rack to cool completely.
